Homemade honey peach pie, made with orchard fresh peaches my mom picked up in Wenatchee. So delicious I forgot to photograph it before digging in. I somewhat improvised the recipe, but here are approximate amounts:
Honey Peach Pie
Makes 1 9-inch pie
Crust:
2 cups flour
1 teaspoon salt
1 cup shortening
1/4 cup ice cold water
Filling:
4 cups sliced peaches
1/4 cup honey
3 tablespoons quick cooking tapioca
2 tablespoons fresh lemon juice
1 tablespoon granulated sugar
1 tablespoon butter or margarine, cut up into little pieces
1/2 teaspoon salt
To make crust: Combine flour and salt in bowl. Cut in shortening until mixture resembles large crumbs. Mix in water until sticky. Form into 2 balls and wrap in plastic wrap. Let rest for 30 minutes.
To make filling: Mix peaches, honey, tapioca, and lemon juice in bowl. Add sugar and salt and mix until well dissolved. Add chunks or butter/margarine. Let sit for 30 minutes or until tapioca has absorbed a fair amount of moisture.
Bring it together: Roll out one ball of dough and line a nine inch pie pan (DO NOT OVERWORK). Roll out the other ball and cut into strips. Fill the pie with the filling. Weave the strips on top of the pie. Bake 45-60 minutes at 400 degrees. Let cool. Eat. OMG ITS SO GOOD.
